One of my best friends is in love with chicken pot pie – I mean she LOVES them! We both changed our eating habits to reduce and/or omit carbs. She is currently having her kitchen remodeled and as you can imagine in our carb-filled world, it’s a little hard to stay on track when your kitchen is down. This meal was so simple to put together. Of course mine did not come out as pretty, but it was my first run. I think next time I will add some mushrooms and possibly omit the peas. I was really surprised how well the crust worked out. I thought it was going to be this big gooey mess, but it was very simple and easy to work with. Please be aware this meal is not for the lactose intolerant. It is filled with dairy, creamy goodness. It is very yummy and will be made again.
