Low Carb Nachos

Low Carb NachosI read several low carb nacho recipes and I decided to make my own version based on the same method I used for the crustless skillet pizza. This was stupid easy and is a go to lunch staple for me. I have also topped with ready made fajita meat as well. So good!

Nachos:

1 1/2 cups of sharp cheddar cheese

1/2 tbsp taco seasoning

ground taco meat, or desired meat

Place cheese in a non-stick skillet (must be non-stick) over high heat and sprinkle with taco seasoning. Once the cheese melts, place meat on top of cheese. Let the cheese brown around the edges. Run a spatula around the rim to loosen and slide onto a cutting board. Let cool for 1-2 minutes and cut to serve.

The result | Success! – tastes better than the real thing.
