This entree was stupid easy – two ingredients. Bake and forget it, but only for 40 minutes. Cauliflower laoded faux-tato salad – make it you will love it. Of course we had roasted broccoli – it’s a house favorite!
Baked Italian Chicken:
1 bottle Italian dressing
6 chicken thighs, bone-in skin-on
Place chicken in a baking dish and top with entire bottle of Italian dressing. Cook at 450 degrees for 40-45 minutes, or until no longer pink.
Cauliflower Faux-tato Salad:
1 package of cauliflower florets
2 tbsp of butter
1/2 cup sour cream
4 slices cooked bacon, chopped
1/2 cup of cheese
Cut cauliflower into small chunks, like you would potato for a potato salad. Steam chunked cauliflower in a microwave safe bowl with a small splash of water for 5 minutes or until fork tender. Drain any excess water. Mix the remaining ingredients in the with steamed cauliflower and serve! This is delicious warm or cold.
1 package of broccoli florets add a drizzle of olive oil and salt and pepper to taste. Mix together on baking sheet and roast next to chicken for 20 minutes.
